Professional Cookery Apprentice at Douneside House

If you’re interested in starting a career in a professional kitchen and love the idea of working somewhere special, this apprenticeship is a great opportunity. Set in the beautiful countryside of Aberdeenshire, Douneside House is a luxury country house hotel with a warm and supportive team that’s passionate about creating memorable experiences for guests.

Over the course of 18 months, you’ll get the chance to learn how a luxury hotel kitchen really works by gaining hands on experience in different sections. From larder, fish, meat, pastry, soups and sauces, each rotation offers new learning opportunities in a dynamic environment. You’ll build confidence, develop valuable skills, and work alongside people who are happy to help you grow.

During the apprenticeship, you’ll:

  • Assist in the daily preparation and cooking of dishes
  • Learn various cooking methods
  • Maintain cleanliness, organisation and safety in the kitchen
  • Learn butchery and other kitchen techniques
  • Follow recipes and cooking specs
  • Collaborate with kitchen staff to design new dishes and ideas

You’ll also be part of the HAS apprenticeship scheme, which means you will get the chance to take part in learning trips and cookery events around Scotland, a great way to see more of the industry and meet new people. Previous trips have included Cromlix Hotel, Peterhead Fish Market, HIT Scotland Talent conference, Royal Yacht Britannia, masterclasses and much more. During your apprenticeship, you will earn while you learn and gain a nationally recognised qualification.

What we’re looking for

You don’t need lots of experience, what really matters is your enthusiasm and willingness to learn. We’re looking for someone who:

  • Is interested in cooking and professional kitchens
  • Has a positive attitude and enjoys working with people
  • Can manage their time during busy shifts
  • Communicates well and works effectively in a team
  • Is aged 16 to 25 and has the right to work in the UK
  • Is able to progress and gain a hospitality apprenticeship over 18 months

Douneside House is run by The MacRobert Trust, a charitable organisation, so we put a lot of care into training and supporting our apprentices. You’ll be joining a friendly group of other apprentices and a team that wants to help you succeed. Some of our managers started as apprentices themselves, so they understand the journey and are there to guide you.

Over the course of 18 months, you’ll get the chance to learn how a hotel really works by gaining hands on experience in different departments. From housekeeping and kitchen operations to food and beverage service and reception, each rotation offers new learning opportunities in a dynamic environment. You’ll build confidence, develop valuable skills, and work alongside people who are happy to help you grow.

During the apprenticeship, you’ll:

  • Help prepare and handle food while learning about quality and safety standards
  • Support front of house by welcoming and serving guests in a friendly way
  • Learn how to use systems for orders, payments, and sales
  • Pick up useful customer service and upselling skills
  • Keep work areas clean and follow food safety guidelines
  • Assist with kitchen tasks and help things run smoothly during busy times
  • Play a part in making sure every guest has a great experience
